Dirty Ice Cream or Not so Dirty Ice Cream?
April 18, 2007 6:05 pm Recipe UpdateI kind a hate the term “dirty ice cream” since those poor small scale ice cream makers are working very hard just to earn a living. I think it has been featured many times already on TV programs like in Jessica Soho. Maybe the small time manufacturers doesn’t have the means to acquire state of the art machines to manufacture ice cream so may the term “dirty ice cream” is because all the manufacturing process are done manually. Mixing all the ingredients by hands and just using crushed ice and salt to freeze the ice cream in carts.
But on the contrary, have you watched embistigador who exposed a large and well known sugar repacking plant that sells dirty sugar? ( with all of the goodies like cat shit, cigarette butt, debri, etc. He He He) So we can assume that hygiene cannot be judged by the size of a business.
The distinct flavor of these ice cream is mainly because the main ingredient is cassava powder and milk is just an additive. Unlike the known brands like Selecta or Magnolia, the main ingredient is milk be it skimmed milk or butter milk. O.K. enough. See the two recipes below:
