Sunset Sandwich
Ingredients:
1/2 cup chopped onion
1 tablespoon water
1 teaspoon butter
2 eggs beaten
1 cup tomato sauce
1/2 teaspoon salt or to taste
1 teaspoon cornstarch
How to make Sunset Sandwich
- Sauté onion in butter: add tomato sauce and simmer.
- Dissolve starch in water; add to eggs and beat well, adding salt.
- Add egg mixture to tomato mixture, stir and simmer until thickened.
- Pour over bread as hot sandwich.
- Yield: 1 & 3/4 cups.
