Spinach Sandwich Spread
Ingredients:
1 small onion chopped fine
2 tablespoons shortening
2 tablespoons flour
1 cup thick tomato puree
2 eggs, well-beaten
Salt to taste
Celery
How to make Spinach Sandwich Spread
- Sauté onion in shortening until golden brown.
- Brown flour slightly with onion. Add tomato puree and seasoning.
- Add the eggs and stir slowly as eggs start to set.
- Chopped dill pickle may be added.
- Approximate yield: 4 portions.
