Vegetarian Kare-Kare

Ingredients:

1      eggplant, sliced round
3      tablespoons oil
1     banana bud, cut fine
2     cloves garlic, crushed
1      cup string beans, cut into 1/2-inch lengths
1/2  cup ground peanuts
3      tablespoons chopped onions
2     tablespoons ground roasted rice
2     medium size tomatoes, cut fine
        Salt to taste
        Soy sauce as desired

 

How to cook Vegetarian Kare-Kare:

  • Sauté garlic, onions and tomatoes. Add salt and soy sauce. Add the banana bud, string beans and then the eggplant.

  • When the vegetables are slightly cooked, add the ground peanuts and roasted rice. Bring to a boil. Don't overcook. Salt to taste. Yield: 6 servings.
