Vegetarian Kare-Kare
Ingredients:
1 eggplant,
sliced round
3 tablespoons oil
1 banana bud, cut
fine
2 cloves garlic, crushed
1 cup string
beans, cut into 1/2-inch lengths
1/2 cup ground peanuts
3 tablespoons chopped onions
2 tablespoons ground
roasted rice
2 medium size tomatoes, cut fine
Salt
to taste
Soy
sauce as desired
How to cook Vegetarian Kare-Kare:
-
Sauté garlic, onions and tomatoes.
Add salt and soy sauce. Add the banana
bud, string beans and then the eggplant.

When the vegetables are slightly cooked,
add the ground peanuts and roasted rice. Bring
to a boil. Don't overcook. Salt to taste. Yield:
6 servings.
