Wash vegetables thoroughly and
blanch one at a time in boiling water with a little salt Strain. Set aside vegetables
and tokwa on a platter.
Peanut Sauce: 3 tbsp. oil
4 to
5 cloves garlic, minced 1/2 cup Tagalog onion, minced 1/4 cup bagoong alamang 1
siling haba, sliced 2 to 3 tbsp. brown sugar 1/4 cup tamarind juice 3/4
cup peanut butter 1 coconut, grated 2 cups coconut milk
Saute
garlic and onion. Add bagoong, sili, sugar and tamarind juice. Mix with peanut
butter and coconut milk. Season to taste. Serve with prepared vegetables.
