Vegetable Fritters Medley

For the vegetable fritters

3/4 cup all-purpose flour
1/4 cup potato starch
1 cup water
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups sliced beans
1 medium carrot, julienned
1 medium sweet potato, julienned
Cooking oil for deep-frying

For the dip
1/2 cup vinegar
2 teaspoons crushed garlic
1/4 teaspoon pepper
2 tablespoons chopped onion
1 jalapeno chili, sliced

Make the vegetable fritters

  • In a medium bowl, combine flour, potato starch, and water. Mix until smooth. Season with salt and pepper.

  • Add beans, carrots, and sweet potatoes. Mix thoroughly.

  • In a deep fryer, heat oil and cook about 1/4 cup of the vegetable mixture in batches until golden brown. Drain on paper towels.

  • Serve with dip.

Make the dip

  • In a bowl, combine vinegar, garlic, pepper, onion, and jalapeno chili.

  • Serve with fritters. Makes 6 Servings.
