Utan Recipe

Ingredients:

2 eggplants, sliced
1 large onion, sliced
1 cup malunggay leaves (moringa leaves)
1 large tomato, diced
2 ampalaya, sliced (bitter melon)
1 segment squash
1 cup alugbati
1 small piece ginger, crushed
1 small bunch sitaw, cut into segments (string beans)

 

How to cook utan:

  • Boil water, add the ginger and keep boiling for 2 minutes.
  • Add all the vegetables in the proper order, starting with those which need longer cooking time.
  • Don’t overcook. Serve steaming hot. Yield: 6 to 8 servings.
