block tofu, sliced
1-1/2 cups water

clover garlic. crushed
1-1/2 tablespoons flour

medium onion, sliced
1/4 cup kalamansi juice
1/2 tablespoon brown sugar
Strips

of red and green pepper
Salt
to taste
How to cook Tofu Escabeche:
Fry
tofu. Set aside. Sauté garlic, onion and ginger. Add
the liquid ingredients. Bring to boil, stirring constantly.
Drop in strips of pepper and sliced garlic. Add the fried
tofu to the mixture and let simmer for 2 minutes.
Remove
from fire and arrange nicely on a platter. Yield: 4 servings.
