1/2
kilo fresh mushrooms 2
tablespoons butter or margarine 1
tablespoon chopped green onion 1
tablespoon soy sauce Salt
Sweet
pepper, sliced
How to cook Sautéed Mushrooms:
Wash or wipe mushrooms and slice them. In
a saucepan, melt butter and when it begins to foam, add mushrooms, salt and stir
constantly.
After 3 minutes, add
pepper and soy sauce and additional butter if necessary. Cook
for 1 minute after juice begins to come from mushrooms. Yield:
5 servings.
COOKING
AND HEALTH TIPS: No Mushy Mushrooms
Mushrooms soak up water like a sponge, then release it later while cooking ( which
can change the consistency of recipes ). Try "dry cleaning" your favorite
fungi. You can find a "mushroom brush" with soft bristles at most kitchen
stores. Lightly moisten the brush (or a rag) with water, and gently wipe the mushrooms
clean.
