Creamed Egg Sandwiches

Ingredients:

Butter
Olives or dill pickles, chopped
5 or 6 eggs, beaten
1/4 cup mayonnaise
Salt

 

How to make Creamed Egg Sandwiches

  • Heat butter on frying pan and add eggs, mayonnaise, olives or pickles, and salt.
  • Cook slowly. stirring constantly until the eggs are of the desired consistency.
  • A little chopped parsley may be added if desired.
  • Place between thin slices of buttered bread. May be served either hot or cold.
  • Yield: 6 to 8 portions.
