Ingredients:
1 small head lettuce
1 pomelo (suha), peeled into segments and broken into small bite size pieces
1/2 cup chopped nuts ( walnuts, pecans, cashew, peanuts, or combination )
Sauce 1:
1/2 cup sweet Thai chili sauce for chiken
1 tbsp. sesame oil
1/4 cup hot water
2 tbsp. sugar
1/2 tsp. rock salt
2 tbsp. salad oil
Sauce 2:
1/4 cup sugar
1 tsp. cornstarch or cassava flour
1 cup water
1/4 cup red vinegar
1 tsp. finely chopped chilli pepper ( siling labuyo) or long chili
1 tsp. sesame oil
2 tbsp. salad oil
1/2 tsp. rock salt
How to make Pomelo – Lettuce Salad
- Wash lettuce and pat dry with a clean towel. Tear into bite size pieces. Combine lettuce, pomelo and nuts in a salad bowl. Serve with sauce 1 and sauce 2.
Sauce 1: in a small bowl, mix all ingredients together until well blended
Sauce 2: In a small saucepan, combine sugar and cornstarch. Stir in water and vinegar and bring to a slow boil. when mixture thickens slightly, add chili, oil and salt. remove from fire and let cool.
