Watermelon Peels Preserve

How to make Watermelon Peels Preserve

  • Pare the watermelon and slice crosswise to about 1/3 inch thick.

  • Remove the central part but leave some red portions.

  • Soak in lime water (one tablespoonful of lime to a liter of water) overnight.

  • Wash and blanch for 10 minutes.

  • Cook in syrup made up of two parts sugar to one part water for 30 minutes.

  • Soak overnight.

  • Boil the syrup without the watermelon slices until thick enough.

  • Pack watermelon slices into 12-ounces preserving jars.

  • Pour syrup and remove air bubbles.

  • Half-seal and sterilize jars for 25 minutes in boiling water.

  • Seal completely.
