Squash Island


Ingredients:

1 can (439 g) DEL MONTE Fiesta Fruit Cocktail,well drained
2 cups mashed kalabasa (from 1/2 kilo raw squash then boiled)
1 can (300 ml) sweetened condensed milk
1/4 tsp. grated ginger
1 cup sugar
1 tsp. vanilla
3 eggs

How to make squash island:

  • Caramelize sugar in desired molds (llanera). Set aside.
  • Mash kalabasa in condensed milk. Mix with the rest of the ingredients.
  • Blend well. Pour into prepared molds. Cover and steam for 40 – 50 minutes.
  • Chill and unmold.
