Potato Pastillas

2 Tbsp. butter
1 can condensed milk
2 pcs potatoes, boiled and mashed
1 pc carrot, shredded
1/2 cup white sugar

Melt butter over low heat. Add condensed milk and stir well.
Slowly add the mashed potato and shredded carrot while stirring continuously.
Cook until mixture thickens. Spread evenly on a greased baking tray and allow to cool.
Cut into 1/2 inch slices and 2 inch long strips. Roll each in sugar before wrapping in a cellophane. Makes 20 pastillas.
