Ingredients:
1 cup white sugar
2 tablespoons cornstarch
No.2 can crushed pineapple with juice
1 & 3/4 cups all-purpose-flour
1 cup brown sugar, firmly packed
1/2 teaspoon baking soda
1 teaspoon salt
1 & 1/2 cups oatmeal, processed in blender till fine
3/4 cup butter or margarine
How to make Pineapple Bar Cookies:
- Preheat oven to 400 deg Fahrenheit. Grease a 9 x 13 inch baking pan. In a small saucepan, combine white sugar and cornstarch. Add pineapple and juice. Cook over medium heat until thick, set aside.
- In a mixing bowl, combine flour, brown sugar, baking soda, salt and oats; cut in butter until mixture is crumbly. Pat half of dough firmly into prepared pan.
- Pour pineapple mixture over dough; pat remaining dough firmly over pineapple mixture. Bake for 25 – 30 minutes. Cool in pan; cut into bars.
