3/4 cup butter
1 & 1/2 cups (300 grams) dark brown sugar
2 & 1/2 cups all-purpose flour
3 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup milk
1 cup chopped nuts
1 cup chopped dried peaches, apricots or mangoes
( omit Cinnamon if mangoes are used )
How to make Fruit Refrigerator Cookies:
- Cream butter with sugar and egg until light and fluffy. Sift dry ingredients together; add to creamed mixture alternately with milk. Add nuts and dried fruit, mix well.
- Shape into rolls, alternately with milk. Add nuts and dried fruit, mix well. Shape into rolls, about 1 & 1/2 inches in diameter, wrap in wax paper and freeze.
- When ready to bake, slice 1/4 inch thick. bake in 400 deg Fahrenheit oven for 12 – 15 minutes. Yields 5 dozen cookies.
