2/3 cup white sugar 2
tbsp. powdered gelatin 1 cup cold buko ( young coconut ) juice 1/2 cup
lychee juice 1/2 cup canned lychees, quartered 1-1/2 cups buko meat, scraped
int o1 inch pieces 2 cups buko juice 3 drops red food coloring ( optional
) 1 cup whipping cream, chilled
How to make Buco Lechees
Gulaman
In a small saucepan, combine sugar, gulaman, 1 cp
buko juice and lychee juice. Let gulaman expand.
Over low fire,
stir mixture constant ly until sugar and gulaman dissolve. Pour into an 8 inch
square serving dish. Remove from fire.
Stir in lychees, buko meat
and 2 cups buko juice, then refrigrirate to set. Mix in red food coloring if desired.
In
a small mixing bowl, whip cream with a fork or electric mixer at medium speed
for 2 minutes. Spread cread on top of set gulaman mixture.
