2 cups finely diced apples
1 cup (200 grams) sugar 1 egg 1 cup (140 grams) all-purpose flour
1 teaspoon ground cinnamon 1 teaspoon baking soda 3/4 cup coarsely chopped
nuts (cashew, walnuts, pecans or hazelnuts, or combination) 1 tespoon vanilla
extract
Topping
1/2 cup (100 grams) brown sugar 1/2 cup
(100 grams) granulated sugar 2 tablespoons all purpose flour 1/4 cup rum
1/2 cup water 1/2 cup (112 grams) butter 1 teaspoon vanilla extract
How
to make Apple Cake:
In medium bowl, mix apples and sugar.
Let stand until sugar is thouroughly dissolved.
In another medium
bowl, beat egg at medium speed, about 1 minute. Sift dry ingredients together.
Sitr into apple mixture. Add beaten eggs, nuts and vanilla.
Pour into
an 8" x 8" inch pan. Bake at 375 deg Fareheit for 40 - 4 minutes or
until cake tester or toothpick inserted in center comes out clean.
How
to make the topping:
Combine sugar, flour, rum and water and cook
until clear. Add butter and vanillla. Stir until butter is thouroughly melted.
Pour over cake while both are hot. Serves 6.
