Ingredients:
1/2 cup ( about 112 grams ) butter
1 cup brown sugar, firmly packed
1 egg
1/2 tsp. vanilla extract
2 cups sifted all-purpose flour
3/4 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/3 cup sour cream
1-3/4 cups coarsely chopped cashew nuts
Frosting:
1/2 cup butter
1 tbsp. instant coffee powder
1/4 tsp. vanilla extract
2 cups confectioner’s sugar
How to make Cashew Cookies
- Pre heat oven to 375 deg F. Cream butter, sugar, egg and vanilla. add dry ingredients and sour cream; mix well.

Fold in nuts. Drop by teaspoonful on greased cookie sheet. Bake for 10 minutes. Cool. Combine ingredients for frosting. Frost cookies.
