5 egg yolks
sugar to taste
3/4 cup milk
rind of 1 lemon
1/4 cup sifted flour
How to make Barquillos
- Stir lightly beaten egg yolks into milk.
- Add flour and mix until smooth. Add sugar and powdered rind.
- Grease wafer iron (barquillera) on both sides and heat over moderate fire.
- Drop tablespoon of batter in the center of hot iron, press iron plates together.
- Heat iron on both sides to brown wafer.
- Shape barquillos while still warm and soft using a greased wooden cone.
