Barquillos

Ingredients:

5 egg yolks
sugar to taste  
3/4 cup milk  
rind of 1 lemon
1/4 cup sifted flour

How to make Barquillos

  • Stir lightly beaten egg yolks into milk.

  • Add flour and mix until smooth. Add sugar and powdered rind.

  • Grease wafer iron (barquillera) on both sides and heat over moderate fire.

  • Drop tablespoon of batter in the center of hot iron, press iron plates together.

  • Heat iron on both sides to brown wafer.

  • Shape barquillos while still warm and soft using a greased wooden cone.
